We import many of the fine ingredients directly from Greece.
We import many of the fine ingredients directly from Greece, such as sea salt, dried oregano from mountain Taygetos, capers and caper berries, many of the staples used in the dishes-like first and cold fresh extra virgin olive oil, selected honey, strained Greek yogurt and of course the barrel-aged feta cheese produced on family farms.
salt
Our sea salt is from the Greek isles and is bright white in colour (thanks to the sun). It is a coarse salt high in salinity (or salty flavour) without a heavy mineral taste.
oregano
Our ground oregano comes from hand picked herbs from Greece’s Mt. Taygetos, the tallest mountain on Peloponnese. It is ground from naturally sun dried and is 100% pure.
capers
Greece is where the caper plant (Capparis spinosa) is thought to be endemic. Capers have been harvested and preserved in Greece for millennia.
evoo
Greek EVOO. Exceptional quality, aroma and taste. The oil is from the first pressing of the olives with no chemicals or hot water added during processing.
honey
Believed by many as the best tasting honey in the world, Greek honey is very unique due to its diverse flora, abundance of sunshine and dry climate.
yogurt
Greek yogurt is one of those foods that contradicts the saying “if it tastes good, it must be bad for you.” It is heavily strained to remove liquid whey and lactose, leaving behind a tangy, creamy product.
feta
Greek Barrel Aged Feta, matured in wooden barrels, is made from fresh sheep’s milk from free grazing animals. The natural aroma of mediterranean grasses in combination with the aroma of the wood, gives a unique rich flavour.
